Whole Wheat Pancakes

Whole Wheat Pancakes or Waffles
(This is so good because freshly ground wheat tastes MUCH better than store-bought flour.)

1 cup whole hard wheat kernels
1 & 1/2 cups milk
1/2 cup vegetable oil
2 eggs
1 tablespoon baking powder
1/2 teaspoon salt

(This requires a good blender such as an Oster - one that can crack ice can probably handle the whole wheat kernels in this recipe.)

In blender, put the wheat and 1 cup of the milk. Blend for about 2 minutes so that the wheat grinds up. Add the rest of the milk and blend 2 more minutes. Add everything but the baking powder and blend well (until it looks all mixed). Add the baking powder and blend just until mixed in.

Note: This batter will be runny, but it will thicken within 2 hours. If possible, let it rest for a couple of hours to thicken. It keeps well in the refrigerator. Add a little more baking powder and a little milk each day it is used.
