Buckwheat Pancakes

Buckwheat Pancakes
(These are good. I usually make them into waffles.)

1 cup buckwheat flour
1/2 cup white flour
1 & 1/2 teaspoons baking powder
1 tablespoon brown sugar
1 teaspoon salt
1 tablespoon vegetable oil
1 egg, beaten slightly
1 & 1/2 cups milk

Mix dry ingredients. Carefully stir in wet ingredients just until mixed. Cook with a waffle iron or as pancakes. Note: This batter might be thin. You can add mroe flour or let it sit for a day and it will thicken up. If you let it sit for a day, add 1/2 teaspoon baking powder before cooking. This keeps several days in the refrigerator.
