Looking for Plunkett in Dublin

I am looking for Sarah (Sally) Plunkett born in Dublin Castle, married to Corporal William Jones. They had a daugher, Jane and maybe other children. They emigrated to Canada about 1845. I am interested in the history of Dublin at that time. Why were the English soldiers there? What caused the fire that burned the records in Dublin?
