RECIPES, RECIPES, RECIPES II

Sauerbraten
Submitted by JEJanke@AOL.coim

Hallo,
Here is the recipe of Sauerbraten. It differs a bit from the traditional recipe like you might read it in some books....

Another old problem, translating recipes: I am not used to US measurements and use volume and weight in German measures. I hope it is no problem ;-)

Ingredients:
1000gr beef
100gr onions
200ml wine-vinegar (5%)
12,5gr Sauerbraten-spice mixture (here in Germany by company Ostmann)
3 big spoons black currant jelly
salt

(Editors note: 1 ounce =28.3495 grams 1 pound =.4536 kilograms=453.6 grams)

How to make the brewing:
100gr onions, peeled and cut to rings
+ 200ml wine-vinegar
+ 300ml water
+ 12,5gr Sauerbraten spice mixture
+ 1 little spoon salt

All together, just short brewed....

This brewing shall be poured over the meat. Keep the beef in the brewing, covered, for 7 days!

Cooking
After 7 days wipe the beef dry and roast it in dripping.
The brewing shall be filtered. Take 1/8 of the filtered brewing + water and cook the beef in it.
If the beef is done take 3 big spoons of black currant jelly, add gravy-powder.

In a "fast-cooking pot" (LOL I really don´t know the exact word) cooking takes about 45 minutes. (Editor's note: I think Jens is trying to say a Pressure Cooker)

This beef and the gravy are served with dumplings and applesauce. Also you can serve red cabbage with this meal.

In case you cannot get the Sauerbraten-spice mixture by Ostmann company, here the content:
Onion, Coriander, pepper, pimento/allspice, paprika, juniper-berry, cinnamon, ginger, grain of mustard seed, laurel, clove, thyme, mace

Enjoy cooking, my mother hopes you and your families like it.
Please tell us, when you have tried this recipe and if everything was ok.
Bye, Jens :-)

MY Grandmother's SOAP RECIPE
Submitted by GFS Carol@aol.com

(use porcelain utensils)

3 Quarts of melted lard or clean animal grease
1 Quart of water into which 1 can of lye has been poured

Allow the lye mixture to get cold and when the lard is just beginning to set, pour lye mixture slowly into it. Keep stirring with a wooden spoon, and add 3 tablespoons of ammonia and 3 tablespoons of Borax powder. Continue stirring until thick. Score before the entire mixture becomes too hard. Allow to stand overnight and cut bars with sharp knife and remove from vessel. Allow soap to season.

Do not use aluminum vessels for any of this procedure!!!

[This soap can be shredded for use in hand washing. ..........No need to use bleach for white clothes!]
