SWEET POTATO CASSEROLE
Ingredients:
3 Cups Mashed Sweet Potatoes (do not use the canned ones)
1 Cup Sugar
3 Eggs well Beaten
3 tsp. Vanilla
1/4 Cup milk
1/4 Cup butter (do not melt butter)
Put into buttered casserole dish.
Topping:
INGREDIENTS:
1 Cup Brown Sugar
1/3 Cup Flour
1 Cup Chopped Pecans
1/3 Cup Butter
Directions:
Mix all together and spread Topping over the top and Bake at 330o for 30 minutes. Another fun way to make this is to layer it with the topping. I did this on Thanksgiving and it turned out really good.
This recipe won first place in a contest in Harleton TX by a 12 yr. old who made it and put it in a pie shell. Congratulations to this young lady on a winning first place.
