German Apple Pancakes

Ingredients:

3 large eggs
3/4 cup milk
3/4 cup flour
1/2 tsp. salt
1 & 1/2 Tbl. butter
1/2 cup thinly sliced apples

Filling:
1 lb. tart, fresh apples
1/4 cup butter, melted
Nutmeg and cinnamon
1/4 cup sugar

Preheat oven to 400 degrees.
Beat together eggs, flour, milk and salt until smooth. Add sliced apples. In iron (or heavy) skillet, melt 1 & 1/2 Tbl. butter. When very hot, pour in batter and put in oven.
Lower oven temperature to 350 degrees after 15 minutes and continue baking for another 10 minutes. During the first 10 minutes, pancake my puff up in large bubbles. If it does, pierce them. Prepare filling while pancake bakes.
Peel apples and thinly slice. Saute them in 1/4 cup butter and 1/4 cup sugar. Season to taste with nutmeg and cinnamon.
When pancake is done, put filling on ONE side and fold over top of pancake.
Dust with powdered sugar.
