Fire Cracker Shrimp
Notes:
This is a delicious way to make up shrimp. The hot flavor adds a special taste to this dish.
Ingredients:
1 lb. Med. or Large Fresh Shrimp (peeled,divined, and butterfly, leave tail attached)
Jalapeno Peppers (stemmed, seeded, and sliced length ways to taste)
12 oz. Bacon (cut in half)
Creole Seasoning
Preparation:
Place slice of jalapeno pepper inside of shrimp and wrap with bacon. Shrimp may be held secure with toothpick or place several on skewer. Sprinkle with Creole seasoning to taste. Place on grill or baking sheet at 375 degrees until bacon is lightly crisp. Remove shrimp and place on serving try with orange marmalade dipping sauce. We have found this dip is a wonderful compliment with fire cracker shrimp or any fried shrimp.
1 Jar Orange Marmalade
1/4 C. Creole Mustard (or to taste)
Mix Creole mustard with orange marmalade. Some like it mild and others prefer spicy.
