BEEF ENCHILADAS
Ingredients:
1 pound ground round
1/2 cup finely chopped onion
2 large cloves garlic, minced
1 jalapeno pepper, chopped
1 1/2 ounces chile powder
1 (15 ounce) can refried beans
2 (15 ounce) cans enchilada sauce
8 ounces sour cream
8 ounces shredded Cheddar cheese
12-18 corn tortillas
Directions:
In a large skillet, brown the meat, onion, garlic, and jalapeno
pepper. Mix in chili seasoning and refried beans and cook until hot.
Remove from heat. In a separate saucepan, heat enchilada sauce to
warm.
Dip a tortilla in the sauce and lay in a large greased roasting pan
(or microwavable plate). Spread with 1 tablespoon of meat mixture.
Repeat with second tortilla and lay on top.
On a third tortilla, spread a spoonful of sour cream and another
tablespoon of the meat mixture. Repeat with remaining tortillas to
make a total of 6 stacks.
Cover them with remaining enchilada sauce, top with the grated cheese
and heat in a preheated 400 degree F oven for 5-8 minutes or until
heated through.
