When I was a child she use to make fish chower------ being YANKEE STOCK at the store there's a salt cured cod fish in a little box......
take the rock hard cod, place it in a pot of water for a hour or so, so you can soften the fish and also to remove some of the salt....
later drain the water
place the fish in a pot of water again
bring to a boil
add potatoes (cut up small pieces, precooked)
sautaed onions, (a med. onion)
she used to use saltpork* (cut real small and fried up) cooked bacon is as good
cook together med-low heat for 1/2 hr.~ maybe longer, keep an eye on It, don't let the fish fall apart
Now you have fish stock, turn stock to low
add a pint of light cream
lightly stir
also add 1/2 stick of butter
pepper for own taste
maybe salt
*salt pork------- you need a piece that has meat in it
as you know when cooking there's always adjustments
MIGHT NEED TO THICKENXOA
